Southwestern Edamame Salad
serves 4
Ingredients
- 1 lb edamame beans
- 1 1/2 C corn kernals
- 15 oz garbanzo beans, drained and rinsed
- 1 C black beans, drained and rinsed
- 4 ea scallions, sliced
- 1/2 C cilantro, chopped
- 1 C cherry tomatoes, halved
- 1 t lemon juice
- 1 cl garlic, minced
- 1/4 C olive oil
- 1/2 T Dijon mustard
Instructions
- Whisk together the lemon juice, olive oil, Dijon, and garlic, then season to taste.
- Mix in the remaining ingredients.
- Plate and serve chilled.
